Sweet Tea Cupcakes with a Lemon Frosting

This southern sweet tea cupcake makes 2 dozen. It is a sweet tea cupcake with lemon icing.


  • 2 1/4c flour
  • 1 1/4tsp baking powder
  • 1/2tsp baking soda
  • 1/4tsp salt
  • 1 1/2 sticks of butter
  • 1 1/4c sugar
  • 1/4c instant iced tea mix
  • 3 tsp vanilla
  • 3 eggs
  • 1 1/2tblspn canola oil
  • 1/3c heavy whipping cream

Heat oven to 350degrees. Combine flour, baking powder, baking soda, and salt in a small bowl. Cream butter, sugar, tea mix, and vanilla. Add eggs 1 at a time. Add yogurt. Add the flour mix slowly till well combined and fluffy.

Pour into cupcake liners. Bake approximately 15 minutes.

For the icing:

  • 1 c of butter
  • 4 c powdered sugar
  • 3-5 TBS fresh lemon juice (I used 3 TBS of lemon extract and then about 3 1/2 TBS of lemon juice)
  • 1 TBS of vanilla
  • yellow food coloring

Mix until fluffy. Add to cupcakes and enjoy!

It’s very easy to make and doesn’t take a lot of time! I made 2 dozen and iced them in approximately an hour.
