Lemon Crinkle Cookies

1/2 c softened butter

1 c sugar

1/2 tsp vanilla extract

1 whole egg

1 tsp lemon zest (lemon skin shavings)

2 tbsp fresh lemon juice

1/4 tsp salt

1/4 tsp baking powder

1/8 tsp baking soda

1 1/2 c flour

1/2 c powdered sugar

Heat oven to 350. Heavily grease a light colored baking sheet. In a large bowl: cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest, and lemon juice. Then, stir in all the dry ingredients until just combined, except the powdered sugar. Pour powdered sugar onto a large plate. Roll a ball of dough in the powdered sugar and place on pan. Bake approx. 9 minutes or until the bottoms of the cookies are barely brown and the top is matte. Let completely cool before taking off pan.
