I’m not a fan of using cake mixes to add to a recipe, but it works for these cupcakes!
- 1 box of white cake mix
- 1 cup of flour
- 3/4 teaspoon of salt
- 1 1/3 cup of water
- 2 tablespoons of vegetable oil
- 1/4 cup of sour cream
- 4 egg whites
Preheat oven to 325. Line cupcake pan with cupcake liners (approximately 1 and 1/2 dozen).
In a large bowl, mix together the cake mix, flour, sugar, and salt. Add the rest of the ingredients with a mixer. Mix until well blended.
Pour the batter into the cupcake liners, about 3/4 full. Bake for about 20 minutes.
- 5 – 6 cups of powdered sugar
- 1 cup stick butter – room temperature
- 1 teaspoon of vanilla extract
- 1 tablespoon heavy cream
- 1 teaspoon lemon juice
In a large bowl, mix together the powdered sugar and butter. (I find it’s easiest to do this with a spoon instead of an electric mixer so the powdered sugar doesn’t fly out everywhere.)
Add the remaining ingredients and mix with an electric mixer until smooth. Add more powdered sugar until it is the consistency you desire.
Spread onto cupcakes and add pearl sprinkles.
